Ingredients
  

  • 225 grams unsalted butter room temperature
  • 200 grams granulated sugar
  • 100 grams light brown sugar
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 360 grams all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon

Instructions
 

  • Preheat oven to 175°C (350°F). Line baking sheets with parchment paper.
  • In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  • Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  • In a separate bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Chill the dough in the refrigerator for at least 30 minutes.
  • In a shallow bowl, mix the coating sugar and cinnamon.
  • Scoop dough into 1-inch balls and roll them in the cinnamon sugar coating.

  • Place dough balls on the prepared baking sheets, leaving space between each one.
  • Bake for 9 to 11 minutes or until the edges are set and lightly golden.
  • Allow cookies to cool on the baking sheet for 2 minutes before transferring to a cooling rack.
  • Serve warm or store in an airtight container once fully cooled.

Notes

Chill the dough to prevent cookies from spreading too much
Use fresh cinnamon for best flavor
To keep cookies soft, store them with a slice of white bread in the container
Brown sugar can be substituted for added chewiness
Cookies freeze well both baked and unbaked
