Ingredients
  

  • 2 cups grated zucchini
  • 2 cups all purpose flour
  • 2 large eggs
  • 1 cup sugar
  • 1/2 cup milk
  • 1/2 cup butter or oil
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon optional
  • 1/2 cup chocolate chips optional
  • 1/2 cup chopped nuts optional

Instructions
 

  • Preheat your oven to 180 C and prepare a greased loaf pan
  • Wash and grate the zucchini then lightly squeeze excess moisture
  • In a bowl mix flour baking powder baking soda and cinnamon
  • In another bowl whisk eggs sugar milk and butter or oil until smooth
  • Slowly add dry ingredients into wet mixture and stir gently
  • Fold in grated zucchini and any optional add ins
  • Pour the batter into the prepared loaf pan and spread evenly
  • Bake for about 50 minutes or until a toothpick comes out clean
  • Remove from oven and let the zucchini bread cool before slicing

Notes

Use fresh zucchini for best moisture and flavor
Lightly squeeze zucchini but do not remove all moisture
Check doneness with a toothpick in the center
Let zucchini bread cool fully before slicing
