- 1 cup mascarpone cheese
- 1/2 cup Irish cream liqueur
- 1 cup strong brewed coffee cooled
- 24 ladyfingers
- 1 cup heavy cream
- 1/2 cup sugar
- 3 egg yolks
- 2 tablespoons cocoa powder
- 1 teaspoon vanilla extract
Brew strong coffee and allow it to cool to room temperature. Mix the coffee with Irish cream in a shallow bowl.
Place egg yolks and sugar in a mixing bowl and whisk until the mixture becomes pale and smooth.
Add mascarpone cheese to the egg mixture and stir until the filling becomes thick and creamy.
In a separate bowl beat heavy cream until soft peaks form.
Gently fold the whipped cream into the mascarpone mixture until light and fluffy.
Dip each ladyfinger quickly into the coffee and Irish cream mixture.
Arrange the soaked ladyfingers in a baking dish to form the first layer.
Spread a generous layer of mascarpone cream mixture over the cookies.
Repeat with another layer of dipped ladyfingers.
Spread the remaining cream mixture evenly on top.
Cover the dish and refrigerate for at least four hours so the layers can set.
Before serving dust cocoa powder over the top of the dessert.
