- 1 cup cup plain Greek yogurt unsweetened
- 1 ripe banana mashed
- 2 tablespoons xylitol-free peanut butter
- 1/4 cup pumpkin puree plain, unsweetened
- 1/4 cup blueberries or chopped strawberries Optional
- 2 tablespoons unsweetened coconut milk or water for smoother consistency Optional
In a mixing bowl or blender, combine the Greek yogurt, mashed banana, peanut butter, and pumpkin puree.
Blend or stir until smooth. If the mixture is too thick, add a splash of coconut milk or water.
Fold in the blueberries or strawberries if using.
Spoon the mixture into silicone molds, ice cube trays, or small paper cups.
Place in the freezer and let set for at least 3 hours or until fully frozen.
Serve one portion at a time as a special treat. Store leftovers in the freezer for up to two weeks.
