Ingredients
- 1 cup cup plain Greek yogurt unsweetened
- 1 ripe banana mashed
- 2 tablespoons xylitol-free peanut butter
- 1/4 cup pumpkin puree plain, unsweetened
- 1/4 cup blueberries or chopped strawberries Optional
- 2 tablespoons unsweetened coconut milk or water for smoother consistency Optional
Instructions
- In a mixing bowl or blender, combine the Greek yogurt, mashed banana, peanut butter, and pumpkin puree.
- Blend or stir until smooth. If the mixture is too thick, add a splash of coconut milk or water.
- Fold in the blueberries or strawberries if using.
- Spoon the mixture into silicone molds, ice cube trays, or small paper cups.
- Place in the freezer and let set for at least 3 hours or until fully frozen.
- Serve one portion at a time as a special treat. Store leftovers in the freezer for up to two weeks.
